Beat the Heat: Chicken Salad Wraps

July 29, 2010 at 11:56 am 1 Comment

This is a Sponsored Post written by me on behalf of Mission Foods. All opinions are 100% mine.

We’ve been working hard all summer to help you beat the heat with recipes & ideas for keeping the kitchen cool. Corrin’s sandwich ideas are fantastic, but if you’re looking for something light & cool on a hot day, try a tortilla wrap instead!

My gluten free family keeps corn tortillas on hand at all times, but Mission flour tortillas are a bit more flexible & easy to manage. You can prepare just about any sandwich tortilla, wrap & serve. Our favorite sandwich wrap is chicken salad—it’s crisp, cool and easily prepared on a budget using your dinner leftovers. I use a very simple recipe with items I usually already have in the kitchen.

The next time you prepare a rub or marinade, throw a couple extra pieces of chicken on the grill. Chop the chicken along with 2 celery stalks & half a small onion. Mix with salt & pepper and 1/4 cup mayonnaise. Feel free to add more or less, depending on your tastes. My girls like their chicken salad a little drier than mine so I usually add more mayo after I’ve wrapped theirs.

It feeds our family of five for less than $5! You’ll find even more budget meal ideas on MissionMenus.com, or get creative & submit your own to Mission Menus Challenge. Through August 9th, they’re taking submissions of your budget-friendly recipes that use Mission flour tortillas, for a chance to compete in a cook-off in Los Angeles and win a $10,000 dream kitchen makeover, along with several weekly prizes.

Be sure to let me know if you enter—I’d be more than happy to fly to L.A. as your guest for the cook-off on September 10th!
