If you celebrated Easter this weekend, you probably have a fridge full of leftover ham, eggs and mashed potatoes. We spent the weekend with my parents, joining my extended family for dinner yesterday. It was quite a feast—ham, chicken, potatoes, noodles, deviled eggs and desserts. Oh, the desserts. Luckily, being gluten free kept me away from most of that table.

But, I did feast on so much amazing food throughout the weekend. Then, my mom sent most of the leftovers back home with us! We have ham, Easter eggs and mashed potatoes. Some of it has already been packed into school lunches. I also have a variety of ways to use up the rest for breakfast, lunch and dinner this week. We can make ham & chicken salad, soup, sandwiches and casseroles.
