The Garden of Eden is a meat-free sandwich that is new to my repertoire, but quickly moving up the list of favorites. It is the epitome of freshness.
Green Goddess Sandwich (makes 2 sandwiches)
- 1 loaf of French bread, cut into sandwich size pieces, or 2 French bread rolls
- 1 ripe avocado, pitted, peeled, and mashed
- 1 red onion, thinly sliced
- 1 tomato, thinly sliced
- 1 cucumber, thinly sliced
- 4 slices of Swiss cheese
- sprouts
Spread mashed avocado on one side of each slice of bread – use all the avocado! Add one slice of Swiss cheese on top of avocado on each slice of bread. Top two slices of bread with red onion, tomato, cucumber, sprouts, and remaining slice of bread.
To grill, add Swiss cheese to two slices of bread. Place all slices of bread on grill, topping side up, until bread is toasted and cheese is melted. Spread mashed avocado on one side of the two slices of bread without melted cheese. Top with red onion, tomato, cucumber, sprouts, and remaining slice of bread.
