My gluten free family keeps corn tortillas on hand at all times, but Mission flour tortillas are a bit more flexible & easy to manage. You can prepare just about any sandwich tortilla, wrap & serve. Our favorite sandwich wrap is chicken salad—it’s crisp, cool and easily prepared on a budget using your dinner leftovers. I use a very simple recipe with items I usually already have in the kitchen.
The next time you prepare a rub or marinade, throw a couple extra pieces of chicken on the grill. Chop the chicken along with 2 celery stalks & half a small onion. Mix with salt & pepper and 1/4 cup mayonnaise. Feel free to add more or less, depending on your tastes. My girls like their chicken salad a little drier than mine so I usually add more mayo after I’ve wrapped theirs.
