July is the height of grilling season and while you escape the heat of the kitchen for the great outdoors, I’ve got some great rubs, marinades, and sauces for you to try!
Lets start with rubs!
A rub is a delightful combination of dried seasonings that are, you guessed it, rubbed on meats before grilling. Add a little olive oil to help the spices adhere to the meat and you’ve got yourself a wet rub. Wet or dry, rubs are great because they require little prep time – just mix, rub, and grill!
Rubs aren’t limited to meat, either. Try a great rub on seafood and veggies—and feel free to change the quantities or add a new flavor to create your own special rub!
All-Purpose Rub
- 4 tablespoons sugar
- 3 tablespoons kosher salt
- 2 tablespoons mustard powder
- 1 tablespoon sweet paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1/4 teaspoon dried oregano
- 1/2 teaspoon dried thyme
Add all ingredients to medium bowl and mix to combine. Sprinkle generously on beef, pork, seafood, or vegetables then rub to coat all surfaces. Grill to perfection.
Coffee Steak Rub
- 2 tablespoons brown sugar
- 6 tablespoons instant coffee
- 2 tablespoons kosher salt
- 2 tablespoons sweet paprika
- 2 tablespoon black pepper
- 1 tablespoon cayenne pepper
- 2 teaspoons garlic powder
- 1 teaspoons onion powder

Dirty Bird (Chicken) Rub
- 1 tablespoon dark brown sugar
- 1 teaspoon white sugar
- 2 teaspoon garlic powder
- 2 teaspoons salt
- 1 teaspoon white pepper
- 1/2 teaspoon mustard powder
- 1 teaspoon cayenne pepper
- 1 teaspoon ground sage
Seafood Rub
- 3 tablespoons dried dill
- 2 tablespoon dried oregano
- 2 tablespoon kosher salt
- 1 teaspoon celery salt
- 1/4 teaspoon sweet paprika
- 1 bay leaf, ground
